Our local/families traditional recipes for fried chicken use breadcrumbs and eggs for chicken coating, but for some time now we have been using a Southern US recipe which is simple, quick and very tasty.
To begin with, coat the pieces of chicken with plenty of Tabasco sauce, cover with milk, and leave in the refrigerator for at least a couple of hours.
At lunch time, while the deep fryer is heating up, put flour, salt and pepper in a plastic bag, transfer a couple of pieces of chicken at a time from the milk to the bag, and shake vigorously, until all pieces are nicely coated.
In the deep fryer, we add a large spoonful of lard to the vegetable oil.
15 minutes later, beautifully crispy fried chicken!
A nice iced lemonade with some fresh mint leaves is the perfect companion.
